How do they can fresh meat?
In the canning process, raw meat is placed in cans, the cans are sealed, and the product is cooked in it's natural juices. Yoder’s canned meats have become popular because of their convenience, low fat content, and long non-refrigerated shelf-life.
We use a hamburger mix that we grind ourselves in-house that contains 20% fat. Years of experimentation determined that this was optimum mix for flavor and calories (since we actually hand pack the raw hamburger into the can, seal the can and cook the Hamburger right in the sealed can - the only ingredient is Beef. We don't add water, salt or anything else).
The higher fat content is not considered "healthy" by today's low-fat standards, but we designed this product for the extremely long shelf life, and the extra calories from fat (and of course the flavor) making it ideal for using if the power went off for some reason. Plus, if you store the cans at room temperature and are watching your fat intake, you'll find when you open a can that the fat separates for you and you will have about a teaspoon of fat at the top of the can, so it is easy to take that out and cut the fat almost in half.
