Couscous with chives and saffron may look like rice, but is actually made from coarsely ground semolina pasta. This couscous is a quick cooking pasta seasoned with chives and saffron, making it a delicious side dish or a savory addition to your favorite casserole recipes.
Couscous is a wonderful, versatile pasta, made of tiny grains of dough that are steamed. It hails from Morocco and northern Algeria, and is a staple throughout North Africa. Couscous can be served so many ways which makes it a perfect staple for your storage.
Directions: - 1 1/4 cups water or re-hydrated Chicken or Beef Base
- 2 tbsp. butter
- 1 cup Couscous
- salt (optional)
Bring water or broth to a boil. Add butter, couscous and salt if desired. Stir. Cover. Remove from heat and allow to stand for 5 minutes. Stir to fluff up and serve. Serving suggestions: Any cooked diced meats or fish can be added, as well as raw or stir fried vegetables. Couscous Salad can be made with the leftover cooked couscous, lemon juice, olive oil and your favorite vegetables (cucumbers, tomatoes, onions, sliced black olives).
